Capable Kitchen · Founding Cohort

Capable at work. Overwhelmed in the kitchen.

A six-week personalized program to make dinner decisions easier, use what you buy, build dependable fallback meals, and create a food-and-kitchen system around your actual schedule, energy, household and space.

Founding-stage offer: this is the first full six-week cohort. We are measuring what actually gets easier instead of pretending the results are already proven.

The actual problem

This isn't really a recipe problem.

A recipe can tell you how to make dinner. It cannot tell you why the easy dinner you planned at noon suddenly feels impossible at 6:30.

  • The meal takes ninety minutes and you have ten minutes of usable energy left.
  • The ingredients are there, but cleanup or setup is blocking the first move.
  • Food disappears in the refrigerator until it becomes waste.
  • One missing ingredient turns into abandoning the whole plan.
  • Takeout wins because it removes the decision.

The Capable Method

Build a system that survives Tuesday.

The point is not culinary perfection. It is making the next useful move easier when the original plan stops fitting reality.

01 · CLARIFY

Start with your real life.

Household, schedule, preferences, equipment, spending, routines, frustrations and low-capacity moments.

02 · ARRANGE

Make food easier to see and use.

Reduce hunting, forgetting and physical friction in the kitchen, fridge, freezer and pantry.

03 · PREPARE

Create useful options.

Flexible staples and components without requiring a rigid meal-prep ritual.

04 · ADAPT

Learn to change course.

Substitutions, sensory cues, leftovers and recovery when the original plan no longer makes sense.

05 · BUILD

Make five to seven dependable structures.

Flexible meals you understand instead of a giant new list of recipes to maintain.

06 · LIVE IT

Close the loop.

Shopping, cleanup, fallbacks and low-energy days become one workable rhythm.

What is included

High-touch implementation, not another information dump.

01

Kitchen Reality Audit

A 60-minute look at the real system before prescribing fixes.

02

Six live sessions

Weekly 75-minute small-group implementation and troubleshooting.

03

Personalized plan

A map based on your household, capacity, recurring foods and constraints.

04

Five-meal framework

Dependable structures you can vary without learning a new recipe every night.

05

Feedback + office hours

Show the real problem with photos or short clips and work through what failed.

06

30-day follow-up

Because a system that only works while class is happening is not much of a system.

Private intensive

I will come to your kitchen.

For the person who does not need another course: a full working week with Brian in your own kitchen, rebuilding the system where it actually has to work.

We cook, shop, reorganize, test fallback meals, remove friction, and work through the decisions that keep breaking in real life. The goal is to leave you with a kitchen you can operate after Brian goes home—not a week of restaurant service in your house.

Measure reality

We will track what actually changes.

Not a dramatic before-and-after for marketing. Useful evidence about what got easier, what did not, and why.

DINNERHow hard is it to decide what to eat?
WASTEWhich groceries repeatedly go unused?
FALLBACKHow many dependable meals survive a difficult week?
RECOVERYCan a meal be improvised when the original plan breaks?

Strong fit

You probably belong here if…

  • You know at least a little about cooking, but dinner still consumes too much mental energy.
  • You buy food with good intentions and watch the week change underneath you.
  • Meal plans and prep systems have not survived real life.
  • You want adaptability rather than dependence on a perfect plan.

Not the job

This is probably not a fit if…

  • You mainly want a recipe subscription.
  • You want someone to prepare all meals for you.
  • You want medical nutrition or mental-health treatment.
  • You need guaranteed savings, weight change or clinical outcomes.

Why Brian

I learned to cook where the plan changes while the pan is hot.

I started cooking young and later worked professionally in kitchens. The useful education was not memorizing more recipes. It was learning what to do when the timing slips, something is missing, the heat is wrong, three things need attention at once, or the original plan simply is not going to work.

Farm work taught me the same lesson from the other end of the food chain. Food takes labor. Waste is real. Seasons do not care about your meal plan. What you actually have in front of you matters more than the imaginary perfect version.

That is what I teach here: not how to cook like me, but how to look at your own kitchen, make the next useful decision, and recover when dinner stops cooperating.

Choose the level of help

Start with the problem. Then decide how much help makes sense.

Capable Kitchen currently has two ways to work together: a $1,277 six-week founding cohort, or a highly limited private week in your own kitchen from $50,000 + travel. If you are not sure which fits, that is a perfectly good answer. Applying does not commit you to buy.

Founding cohort applications are for interest and fit only while the starting date and available seats are being finalized. Please wait for a confirmed date and seat before making any payment.
